For budding chefs who also love their beer, this is a great little recipe, easy to make and lasts for a few weeks in the fridge, it’s the gourmet gift that keeps on giving!

We use O’Hara’s Curim, our Celtic Wheat Beer, which adds a nice tartness to the jam to balance the sweetness of the tomato. Toasties will never taste the same again – we guarantee it!

Method

– Fry off 2 packets of rashers, and pour off the dripping from the meat.  Roughly chop the bacon once it cools.

– Use 1tbsp of the dripping to fry 1 red onion until they start to become slightly translucent.  Add 4 coves of smashed garlic – breathe that heady scent in!

– Pour in 12 oz of O’Hara’s Curim Gold Wheat Beer and 2 tsp of apple cider vinegar.

– Add 2 tbsp of brown sugar, the chopped bacon and 1.5 cups of crushed tomatoes with a pinch of salt and pepper.

Cook until most of the liquid has evaporated until the chunky jam remains, and hello grilled cheese sambos!
